ABOUT 10 minute red velvet cakelets RECIPE

Inspired from the Midwest Living Magazine, these little microwave red velvet cakes can be made in less than 10 minutes from start to finish. Makes 2 perfect servings in mugs or bowls. Perfect for that Valentine feel without too much effort!

Ingredients Serving: 2

  1. 6 tbsp all purpose flour
  2. 2 tbsp cocoa powder
  3. 5 tbsp granulated sugar
  4. 1/4 tsp baking powder
  5. A pinch of salt
  6. 1 egg
  7. 3 tbsp oil
  8. 1/2 tsp red food colouring
  9. 1 tsp vanilla essence or extract
  10. 1/4 cup Milk
  11. 1/2 tsp vanilla
  12. 2 tbsp icing sugar (optional)

Instructions

  1. In a small bowl , mix together the milk and vanilla. Keep it aside .
  2. In another bowl, mix together the oil, egg, colouring and vanilla.
  3. In a slightly bigger bowl, mix together all the dry ingredients, flour, cocoa , sugar, baking powder and salt.
  4. To the dry ingredients, pour in the milk mixture and the egg-oil mixture. Mix until its smooth.
  5. Divide this mixture into two microwaveable bowls or mugs, not filling more than half of each.
  6. Microwave one at a time, at full power (900 w) for 1 minute if using a bowl, 1 and 1/2 minutes if using a mug. Cake is done when the top is springy to touch. If not done, cook it for another 10 seconds. Cool it for 3 minutes.
  7. Optional : Cut out a piece of parchment the size of your bowl or mug and cut out a heart from the centre . Place the parchment on the cakes once cooled and sift the icing sugar. Lift off the parchment carefully.
  8. Serve it warm for best taste.
