ABOUT Heart meringues RECIPE

Super easy meringues made with just granulated sugar and egg whites. Light as air with a crisp shell and chewy centre. Pipe in a heart shape and spread the love!

Ingredients Serving: 30

  1. 1/2 cup or 100 grams of granulated sugar
  2. 2 egg whites, at room temperature
  3. Pink or food colouring (optional)

Instructions

  1. Line a cookie sheet with parchment or silicon mat. Preheat the oven to 100 C or 225 F.
  2. In a metal or glass bowl , measure the sugar and egg whites. Place the bowl over a saucepan with an inch of water. The bowl must fit snugly in it without the bottom of the bowl touching the water (double boiler method).
  3. Place the sauce pan on a medium heat and whisk continuously until the mixture gets frothy and all the sugar is dissolved (no granules must be left).
  4. Take the bowl off the saucepan and turn off the heat. With the help of a handheld mixer or whisk, beat continuously until firm peaks appear. This will take several minutes.
  5. If using, add a drop of food colour and beat until it is incorporated well. Add more drops as needed. (Note that too much colour will change the texture and might give a bitter taste though.)
  6. Fill the batter into a piping bag filled with a round or open star tip.
  7. Pipe onto the parchment paper. Press and release for simple meringues . For heart shaped , just pipe two inverted comma shapes with the ends joining . Or you can also draw heart outlines on the parchment and fill.
  8. Bake at 100 degrees C for 1 hour . When you lift the meringues, they should come off the parchment cleanly and easily. If they are sticky, bake for a few more minutes and check. Cool in the oven for one hour.
  9. Serve when desired as it can last upto a week in an air tight container.
