Ingredients Serving: 4

  1. Whole wheat flour 2 cups
  2. Salt
  3. Oil
  4. Carom seeds or ajwain 1 tsp
  5. Methi leaves 1 bunch
  6. Green chillies
  7. Chopped garlic 2 tsp
  8. Boiled potatoes 5-6
  9. Chopped onion 3 big size
  10. 2 tsp ginger garlic paste
  11. Cumin seeds 1 tsp
  12. Bay leaf
  13. Slit green chilies
  14. Red chilli powder
  15. Turmeric powder
  16. Fresh coriander leaves
  17. Ghee or clarified butter
  18. Mustard oil
  19. Garam masala powder

Instructions

  1. Heat 1 tbsp oil
  2. Add the chopped garlic
  3. As the raw smell goes add chopped green chilies and methi leaves
  4. Add salt
  5. Wait for the water to dry
  6. Cool down and add this to the whole wheat flour all with some carom seeds and water
  7. Make a nice smooth and soft dough
  8. Now heat mustard oil in a kadhai and fry the boiled potatoes
  9. Add cumin seeds and bay leaf
  10. Then add the chopped onions
  11. Saute till it becomes soft
  12. Then add the ginger garlic paste.
  13. Fry till the raw smell goes
  14. Then add the chopped tomatoes
  15. Make it mushy
  16. Add the dry ingredients like salt,turmeric, chilli powder and cook till oil separates.
  17. Add the potatoes cook for few minutes.
  18. Add water as required
  19. Then put some garam masala powder
  20. Finally add chopped coriander leaves
  21. From the dough make equal balls
  22. Roll them into flat paratha and fry in a tawa with ghee or refined oil.
