ABOUT Ghee Chaarkoni Roti and Mutton Masala... RECIPE

Simple yet high carb nashta of a Hyderabadi on any given day and especially on weekends. These parathas can be made with oil too. My mom used to make like this for us and i do the same now for my family. Nothing much fancy here, just simple rotis with ghee and mutton cooked in Indian spices. Only thing is that i made them square shaped. We can make triangular rotis too. By doing this, they become cottony soft and just melts in the mouth. Applying little ghee and folding them makes them so soft and delicious. Aroma of ghee is also so very captivating in this particular dish and chaarkoni means square shaped rotis. Ingredients Serving: 4

  1. FOR THE ROTIS ; Whole wheat flour 3 cups
  2. Salt 1 tsp
  3. Oil 1 tbsp
  4. Water 1 cup or more
  5. Ghee 1/2 cup
  6. FOR THE MUTTON MASALA ; lamb meat 500 gm
  7. Ginger garlic paste 1 tbsp
  8. Salt 1 tsp
  9. Onions finely chopped 4
  10. Red chilli powder 1 tbsp
  11. Garam masala 1 tsp
  12. Coriander powder 1 tsp
  13. Cubeb powder (kababchini or tailed pepper)
  14. Coriander leaves chopped 1/4th cup
  15. Oil 5-6 tbsp

Instructions

  1. Make a smooth dough out of all the ingredients mentioned.
  2. Keep it covered for 15 minutes.
  3. Use of water depends upon the quality of the flour.
  4. Divide the dough into equal size balls.
  5. Roll them into square or triangular shapes.
  6. While folding apply some ghee on the roti and fold.
  7. Sprinkle some dry flour too.
  8. Roast all of them using ghee.
  9. Oil also can be used if desired.
  10. Keep them warm in a casserole.
  11. For the mutton masala, heat oil in cooker.
  12. Add the sliced onions.
  13. Saute them until translucent along with ginger garlic paste.
  14. Add the rest of the spices and the mutton bone in or boneless.
  15. Add the salt also.
  16. Saute it for 2 to 3 minutes.
  17. Pressure cook this for 7 whistles depending upon the meat used using little water.
  18. Let the pressure settle down.
  19. Now simmer it on medium flame for 5 more minutes.
  20. Adjust salt at this stage if needed.
  21. Garnish with coriander.
  22. Serve hot with ghee rotis.
  23. Simple gravy masala not too thin nor thick to go with rotis.
