ABOUT Spiced Mini Apple Pies RECIPE

A pie is a baked dish which is usually made of a pastry dough casing that covers or completely contains a filling of various sweet or savory ingredients. Short crust pastry is a typical kind of pastry used for pie crusts, but lots of other things can be used, including baking powder biscuits, mashed potatoes, and crumbs. It can be prepared in variety of sizes, shapes and fillings. It is popular dish in the UK, Australia, Ghana, Nigeria, Europe, New Zealand, Canada, America and India. In this recipe, I have used apples, honey, sugar and spiced with cinnamon powder. Short crust pastry dough is being used to encase the filling. It tastes amazing once baked. Goes well with hot tea, coffee or can be eaten as it is.

Ingredients Serving: 4

  1. Red Apples – 2 Peeled, cored and cut into small pieces
  2. Cinnamon powder – 1tsp
  3. Corn flour – 1 tbsp.
  4. Honey – 2tbsp
  5. Sugar – 1 tbsp.
  6. Water 1 tbsp.
  7. Beaten Egg – ¼ cup  for greasing
  8. For Shortcrust Pastry Dough - Flour or Maida – 1cup
  9. Chilled Butter – 1/2 cup 
  10. Castor Sugar – 1 tbsp.
  11. Egg - 1 (whisk it and use as required)

Instructions

  1. Mix the flour, chilled butter, sugar and salt together in food processor until it forms a coarse mixture or mix using fingertips until it forms breadcrumb like texture.
  2. Add egg and gently knead it into a dough.
  3. Make a disk, tightly cover with cling wrap. Keep in the refrigerator for 30 minutes.
  4. Meanwhile prepare Pie filling. In a nonstick pan or sauce pan, add apple pieces, sugar and a tablespoon of water. Cover and cook apples until soft. Keep stirring in between.
  5. In separate bowl take honey. Mix corn flour. Add this mixture into apple mixture. Stir for few seconds.
  6. Switch off the flame. Remove apple mixture on plate. Let it cool.
  7. Take pastry dough out. Roll it a little thick into 8-9-inch circle. Using a 4-inch round cutter, cut out 14 circles.
  8. Spoon the fruit filling onto half of the pastry circles, leaving a border of about 1 ½ cm around the edge.
  9. Brush the edges with beaten egg and place another plain disc on top.
  10. Seal the edges. Make little dent on top and bottom to form an apple shape. Press the edges using fork.
  11. Prepare little leaf shapes and stalks using leftover pastry.
  12. Press and stick them on apples thoroughly. Poke the stem hole in the top with skewer. Repeat the process with remaining circles and keep ready all the pies.
  13. Arrange them in baking tray. Brush them with beaten egg. Chill for 10-15 minutes.
  14. Preheat oven at 180-degree C.
  15. Bake the pies for 20 minutes. Increase the temperature to 200-degree C and bake again for 3-4 minutes or until top turns golden and crisp.
  16. Serve hot with tea, coffee or with custard.
