Ingredients Serving: 4

  1. 1 cup whole wheat flour
  2. 1 1/4 cup flour
  3. 1 tbsp Baking powder
  4. 1/8th spoon salt(omit if using salty butter)
  5. 85 grms cold butter
  6. 1 cup chopped strawberries
  7. Sugar 1/4 cup
  8. 1 egg
  9. 1/2 cup cream
  10. Milk for brushing the scones
  11. FOR THE STRAWBERRY BASIL COULIS
  12. Strawberry hand ful
  13. Sugar 2 tbsp
  14. Lemon juice little
  15. Fresh basil leaves 7 to 8

Instructions

  1. In a big bowl whisk flours ,sugar,baking powder and salt
  2. Cut the butter into small cubes and mix with the flour
  3. The flour mix should look like crumble
  4. Chop the strawberries into cubes and toss them into the flour gently
  5. Take the egg in a separate bowl and add the cream and whisk it well with a fork
  6. Gradually add this egg and cream mix into the flour
  7. Be very gentle.do not crush the strawberries
  8. Keep mixing/kneading till you have a pilable dough
  9. Grease the baking tray and put the dough on it and flatten it
  10. Make cut diagonally and put a slice of strawberry on each scone
  11. Brush the scones with milk
  12. Bake the scones in a preheated oven at 200 degrees c for 18 to 20 mins
  13. FOR THE STRAWBERRY BASIL COULIS
  14. Take handful of chopped strawberries add 2 tbsp sugar and little lemon juice.let it bubble
  15. Add a few hand torn basil leaves and mix
