ABOUT Fish Frittata in Carrot Cups RECIPE

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. I used fish cooked with Indian spices and a carrot cup as a base, to give a twist to this authentic Italian dish.

Ingredients Serving: 6

  1. Grated carrots - 1 1/2 cups
  2. cornflour - 1 tablespoon
  3. Oil- 1 1/2 tablespoons+ 2 tablespoon
  4. salt - to taste
  5. Crushed pepper - To taste
  6. Smashed Fish - 1 cup (Fish pieces boiled with salt, then deboned and smashed)
  7. Chopped Veggies of choice - 1 cup (I used potato, cauliflower florets, carrots, tomatoes and beans)
  8. onion - 1 Big
  9. ginger paste - 1 teaspoon
  10. garlic paste - 1/2 teaspoon
  11. cumin powder - 1 teaspoon
  12. turmeric powder - 1 teaspoon
  13. Kashmiri Mirch Powder - 1/2 teaspoon
  14. coriander powder - 1 teaspoon
  15. Garam masala powder - 1 teaspoon
  16. Finely chopped green chillies - To taste
  17. eggs - 5
  18. Milk- 1/4 cup (more if needed)
  19. Boiled egg white -2 egg whites (grated)
  20. chilli flakes- To taste
  21. tomato sauce/salsa - As needed


  1. 1. Preheat the Air fryer at 180 degrees centigrade for 5 minutes. Grease 6 muffin cups. Meanwhile, squeeze the grated carrots to remove as much juice as possible.
  2. 2. Spread the squeezed carrots onto a plate, toss with cornflour, salt, pepper and 1 1/2 tablespoons of oil. Divide it into 6 portions.
  3. 3. Put a portion of carrot mixture in each cups. Press into the bottom and up the sides to give the shape of the muffin cups. It will shrink while baking the cup, so be generous while putting the carrot mixture.
  4. 4. Bake in the air fryer for 8 minutes at 180 degrees centigrade. Take out of the air fryer and keep aside till it cools down.
  5. 5. In the meantime, Prepare the filling. Heat 2 tablespoons oil in a nonstick pan. Add onion & Fry till translucent. Add ginger and garlic paste and fry for 1 minutes. Add all the veggies (except tomatoes) and salt to taste.
  6. 5. Cook cover on a low flame till veggies are almost done. Now add tomatoes, green chillies and fish (which is boiled, deboned, smashed and kept aside).
  7. 6. Add all the powder masala stir occasionally and cook till done.
  8. 7. Whisk the egg with milk, salt & pepper to taste. Mix it with the fish filling with a fork. Put 2 tablespoons of this mixture into each prepared carrot cup (The cups were placed in the mould).
  9. 7. Bake in the air fryer for 8 more minutes at 180 degrees centigrade.
  10. 8. Serve and Enjoy the frittata garnished with grated boiled egg whites; which is tossed with chilli flakes and tomato sauce/salsa on top of the egg white mixture.
