ABOUT Khandavi RECIPE

Khandvi is a typical Gujrati breakfast dish, made with besan and with a tempering on top.

Ingredients Serving: 4

  1. 1 cup besan
  2. 1 cup dahi (curd)
  3. 1 1/2 cup water
  4. 1/2 tea spoon salt
  5. 1 tea spoon green chilli paste
  6. 1 tea spoon ginger garlic paste
  7. 1 table spoon rai (Mustard Seeds)

Instructions

  1. Take besan in a bowl, add curd, salt and curd, mix well to form a batter.
  2. Then add ginger garlic paste , green chilly paste into the above and mix well.
  3. Now pour this batter into a kadhai, on a flame. Now cook on a low flame with continuous stirring, for 10 minutes.
  4. Now once the mixture gets thick enough like a dough, pour that onto the back of a steel plate greased with little oil. Spread t evenly to form a thin roti or sheet.
  5. Let it set and cool for few minutes, then slic them into slices, roll each slice to form the spiral khandvi.
  6. Now heat some oil in a pan, add mustard seeds and curry leaves [optional]. Let them splutter and pour this tempering onto the rolled khandvi. serve with some chutney on the side.
