ABOUT Egg Bhurji RECIPE

Egg Bhurji is a popular Indian food and eaten for breakfast or lunch or dinner. Another version of scrambled egg with some veggies like tomatoes, onions, coriander leaves, chillies and seasoned with some hot spices. It is Mumbai’s famous and fast selling food available at all food stalls prepared using Pav bhaji skillet. It is commonly called as Anda Bhurji Pav or Bhurji Pav. In veg, bhurji can be made using paneer, soya chunks.

Ingredients Serving: 4

  1. Eggs - 2
  2. Onion large– 1 finely chopped
  3. Finely chopped Tomatoes – 4 medium
  4. Finely chopped Coriander leaves – 3 tbsp.
  5. Chopped chillies – 2-3 Medium Hot
  6. Grated Ginger – 1/2 tbsp or fresh ginger paste – 1/2 tbsp.
  7. Turmeric powder - 1/2 tsp
  8. Garam masala (Chicken) –1 tsp
  9. Red chilli powder – 1 ½ tsp
  10. Salt to taste
  11. Oil – ½ tbsp.
  12. For Serving – Brown Bread slices or Pav

Instructions

  1. In a wok or nonstick pan heat oil. Add finely chopped onion. Cook till translucent.
  2. Add Grated ginger and green chillies. Cook till raw aroma goes away.
  3. Add red chilli powder, turmeric, garam masala and salt. Stir for few seconds.
  4. Add finely chopped tomatoes. Cook them on low flame till tomato softens and become mushy.
  5. Using masher and mash it for few seconds.
  6. Add finely chopped coriander leaves. Mix well.
  7. Add slightly beaten eggs and keep stirring the mixture until small, soft crumbs are formed. This will take 4-5 minutes.
  8. Check the texture of crumbs, if you want your egg to cook more, cook it for more 2-3 minutes. I had kept it soft and little creamy.
  9. Switch off the flame. Garnish it with finely chopped coriander leaves.
  10. Serve hot with brown bread or Pav or Roti, Naan.
