Ingredients Serving: 3

  1. 3/4 cup lightly roasted rava
  2. 3/4 cup palak puree
  3. 1/4 cup thick curd
  4. 1/4 cup water
  5. Salt to taste
  6. 1/4 tsp cooking soda (optional)
  7. Few roasted cashews or almonds
  8. For Tempering
  9. 1 tsp ghee
  10. 1 tsp mustard
  11. 1/2 tsp jeera
  12. Few curry leaves

Instructions

  1. Clean, wash and puree fresh palak leaves.
  2. In a bowl add rava, palak puree, curd and water if required and mix to make a thick batter. Set aside for 15 mins.
  3. Meanwhile heat water in a idli steamer.
  4. Heat ghee and fry the nuts and keep it aside.
  5. To the same ghee add mustard seeds and let it splutter, add jeera and shredded curry leaves and fry.
  6. Add this to the batter and mix well.
  7. Add salt and soda if using and mix just before cooking.
  8. Grease the idli moulds and place the roasted nuts and pour the batter over this.
  9. Steam for 10-15 minutes or until a sharp knife inserted comes out clean.
  10. Serve with coconut chutney or gravy of choice
