ABOUT Capsicum Onion Parathas.... (Shimla Mirch Pyaaz Parathas) RECIPE

Paratha is such a versatile one and it can pretty much be stuffed with any filling of choice. A complete breakfast that is healthy too with a capsicum and onion stuffing. Best served with butter and some raita alongside. Lovely breakfast for a special weekend with loved ones beside. Enjoy !!!!!!!!!

Ingredients Serving: 5

  1. For the stuffing ; Capsicum thinly sliced 2 cups
  2. Onions thinly sliced 2
  3. Salt 1 tsp
  4. Ginger grated 1 tbsp
  5. RED CHILLI POWDER 1 TBSP
  6. Turmeric 1/2 tsp
  7. Cumin seeds 1 tsp
  8. Oil 1 tbsp
  9. Coriander leaves chopped 1/4th cup
  10. Garam masala 1 tsp
  11. Dry mango powder 1 tsp
  12. Asafoetida 1/8th tsp
  13. Oil or ghee for shallow frying 1/2 cup
  14. FOR THE PARATHA DOUGH ; Wheat flour 3 cups
  15. Salt 1 tsp
  16. Oil 1 tbsp
  17. Water 1 1/2 cups

Instructions

  1. Make a smooth dough out of all the ingredients.
  2. Keep it aside for 15 minutes.
  3. Heat a tablespoon of oil in a pan.
  4. Add asafoetida and grated ginger to it.
  5. Add cumin seeds now.
  6. Saute them for a minute.
  7. Now add red chilli powder followed by the sliced onions and capsicum.
  8. Saute for about 5 minutes on a medium flame.
  9. Sprinkle some garam masala and dry mango powder.
  10. Garnish with coriander leaves.
  11. Switch off the flame.
  12. Divide the dough into equal sized balls.
  13. Now roll a small disc and place 2 tablespoons full of stuffing on each.
  14. Cover with another disc and roll gently to a paratha.
  15. Make all the parathas similarly and roast on a griddle or a tawa.
  16. Smear ghee or oil as desired and roast it well on both the sides.
  17. Serve hot with butter and raita alongside.
