Ingredients to make Idli

  • Idli rice- 2 cup
  • urad dal/ Ulundhu- 1/2 cup
  • fenugreek seeds/Vendhayam- 2 tablespoon
  • salt- to taste

How to make Idli

  1. Wash and soak all the ingredients for 3-4 hours.
  2. Grind the rice by adding enough water. It should be silky smooth.
  3. Grind fenugreek seeds till its fluffed up.
  4. To the top of it, add urad dal and add water little by little so that it gets increased to about 8 times its volume.
  5. Now mix the urad dal mixture with the rice and season with salt.
  6. Allow the batter to ferment for around 10-12 hours.
  7. The batter should have increased in volume by now. Mix well with a ladle.
  8. Take a idli plate, grease it with oil and gently fill the moulds with the batter. Place it in a idli vessel and let it steam for 6-7 minutes in medium flame.
  9. Leave it undisturbed for 2-3 minutes and sppon it out.
  10. Spongy idlies are ready to serve.

My Tip:

Wash the rice 3-4 times to get a whiter idli. Keep an eye on batter. If its too watery, idlies will be flat and hard. Add salt before fermentation in sunny days. If you’re living in colder countries, place the batter in warm place (inside the oven). Do not remove immediately once its done, it might get sticky.

Are you sure about the proportions? 02 cups of rice (500 g) soaked for one person? How many idlis do you suppose one person can have in a meal?
