ABOUT Rocky Green Chana Salad With Cranberry Dressing RECIPE

A light crunchy salad for a healthy valentine evening.

Ingredients Serving: 2

  1. For Dressing - Dried cranberries - ½ cup
  2. Water - ½ cup
  3. Salt - to taste
  4. Chili flakes - ½ tsp
  5. Olive oil - 2 tbsp
  6. For Salad - Green chanas - 1 cup
  7. Groundnut chikki - ½ cup (chopped)
  8. Apple - ½ (slices)
  9. Orange - ½ (deseeded & chopped)
  10. Lettuce leaves - few
  11. Almonds - 2 tbsp (slightly roasted)
  12. Black olives - 2 tbsp (slices)
  13. Dates - 4-5 (deseeded & chopped)
  14. Dried mixed herbs - 1 tsp
  15. Salted Nachos Chips - few (for garnish)

Instructions

  1. For Dressing - Soak cranberries in water for sometime. Then grind to a smooth paste adding salt & chili flakes. Add olive oil and mix well.
  2. For Salad - In a bowl, mix all the ingredients except the lettuce leaf and keep aside for 30 minutes for the flavors to incorporate.
  3. Just before serving, add the lettuce leaves & cranberry dressing. Give a quick toss & serve immediately topped with nacho chips.
