ABOUT Carrot Onion Parathas... RECIPE

A healthy version of veggie paratha that is tasty too. These make for a lovely breakfast idea. Kids will love it too. The crunch from the carrots and the tanginess of the lemon add a distinct flavour to them. Yummy sweet and sour combo of these parathas makes them uniquely delicious and a real treat to the tastebuds.

Ingredients Serving: 5

  1. Carrots shredded 3
  2. Onions thinly sliced 2
  3. Lemon juice 1 tbsp
  4. Ginger grated 1 tbsp
  5. Red chilli powder 1 tsp
  6. Green chillies finely chopped 2
  7. Garam masala 1 tsp
  8. Dry mango powder 1/2 tsp
  9. Asafoetida 1/8th tsp
  10. Coriander leaves chopped 1/4th cup
  11. Oil or ghee for shallow frying 1/2 cup
  12. FOR THE PARATHA DOUGH ; Wheat flour 3 cups
  13. oil 2 tbsp
  14. Salt 1 tsp
  15. Water 1 1/2 cups

Instructions

  1. Knead a smooth dough for the parathas.
  2. Cover and keep aside for 15 minutes.
  3. Combine all the ingredients for the stuffing in a wide mixing bowl.
  4. Adjust them according to taste.
  5. Divide the dough into balls of equal size.
  6. Roll each into a disc and place the desired amount of stuffing in the centre.
  7. Cover it up with another disc on top.
  8. Roll gently into a big disc thick like a paratha.
  9. Roast it on a hot tawa or a griddle using ghee or oil.
  10. Make all in a similar way and place them in a casserole to keep warm.
  11. Serve hot with carrot, cucumber and onion raita and lots of salad alongside.
