ABOUT Biscuits and Gravy RECIPE

I'm a California-born, Japan-raised, daughter of a retired Marine from Michigan and a mother from the Philippines. I am not a child of the South, and by no means was destined to fall in love with this southern classic. So how did it happen? Christmas morning, every year, for as long as I can remember…

Ingredients Serving: 4

  1. 1 lb breakfast sausage (I prefer sage)
  2. 2 12oz cans of evaporated milk
  3. 1 Cup water
  4. 2 tbsp Flour
  5. 2 tsp salt
  6. 1 tbsp pepper
  7. 1/2 tsp crushed red pepper
  8. Your favorite biscuit recipe/package

Instructions

  1. In a skillet (I use cast iron), brown sausage on medium-high heat (approx 3-5 mins).
  2. Once cooked, remove the sausage from the skillet and drain.
  3. Keep pan on medium-high heat, and pour the flour into the skillet with the leftover sausage grease. Whisk for approximately 2 mins to create a roux.
  4. Pour in the evaporated milk, plus one cup of water (I like to use the can for extra flavor). Stir until the roux and the milk are combined and smooth.
  5. Add the cooked sausage and leftover ingredients (salt, pepper, crushed red pepper).
  6. Once the gravy begins to bubble, reduce the heat to medium. Stir constantly for 8-10 mins.
