Ingredients Serving: 4

  1. Kaddu/pumkin 250 gram
  2. Chana/Black chickpeas 2 cups
  3. Garlic paste 1 tspoon
  4. ginger paste 1 tspoon
  5. Cinnamon 1 stick
  6. Bay leaf 4
  7. Salt according to taste
  8. Tumeric powder 1/2 tspoon
  9. Red chilli powder 1 tspoon
  10. Garam masala powder 1 tspoon
  11. Coriander powder 1 tspoon
  12. Dry mango powder 1/2tspoon
  13. Asfuodia/hing 1 pinch
  14. Oil 1 and 1/2 tbspoon
  15. For Banarasi kachori
  16. Whole wheat flour/atta 2 cups
  17. Semolina/suji 1 cup
  18. Skinned Black gram /urad dal powder 1 cup
  19. ginger paste 1 tspoon
  20. Cumin 1 tspoon
  21. Asafoetida /hing 3 pinch
  22. Black cardamom powder 1/4 tspoon
  23. Coriander powder 1 tspoon
  24. Salt
  25. oil 2 tbspoon
  26. Oil for Deep frying

Instructions

  1. For kaddu chana
  2. Soak chickpeas over night and boil it.
  3. Peel the hard skin of mature pumkin and cut it.
  4. Heat oil in a pan.
  5. Add asafoetida cinnamon bay leaf and ginger garlic paste and fry them.
  6. Add tumeric powder,red chilly powder, coriander powder and garam masala powder.
  7. Let the mixture get fried.
  8. Add pumkin and mix well.
  9. Cook the pumkin for about 15 minutes.
  10. Mash the pumkin a little.
  11. Add boiled black chickpeas and mix them well.
  12. Add dry mango powder.
  13. Cook for 15 minutes.
  14. For kachoris
  15. Mix together all ingridents of kahoris
  16. Rub in the oil into mixture and knead the tight dough.
  17. Keep the dough for 15 minutes.
  18. Divide dough into marble sized balls.
  19. Roll out kachoris.
  20. And deep fry in hot oil
  21. Serves immediately with kaddu chane ki sabji.
