ABOUT Muesli Energy Breakfast Bites RECIPE

On-the-go healthy protein-packed energy breakfast bites made with healthy muesli cereal, high-fiber oats, peanut butter and honey. Pack them in yours or kids' lunch box or pop them in your mouth for a quick snack!

Ingredients Serving: 4

  1. ½ cup peanut butter (creamy or crunchy)
  2. 2 ½ cups muesli plus oatmeal (1 cup oatmeal and 1 ½ cups muesli cereal)
  3. 4 to 5 tablespoons honey
  4. 4 tablespoons cocoa powder

Instructions

  1. Transfer the peanut butter into a saucepan and heat on medium low heat. Once the peanut butter has melted, add the honey, give it a good mix and remove from heat.
  2. Meanwhile, mix the muesli, oats and cocoa powder in a large mixing bowl.
  3. To this dry mixture, add the melted peanut-butter honey mixture and stir well until thoroughly mixed. If you feel the mixture is too dry, add some honey or more melted peanut butter.
  4. Roll into balls of your choice of size and enjoy these energy bites for breakfast, as a mid morning snack or as a treat in your or your kids’ lunch box.
