ABOUT Kuzhi Paniyaram (Stuffed with veggies) RECIPE

Kuzhipaniyaram is the traditional breakfast of Chettinadu Cuisne. Since I wanted to consume my family to consume more veggies , I used to make the traditional Kuzhipaniyaram with stuffed veggies.

Ingredients Serving: 4

  1. Parboiled rice 1 cup
  2. Raw Rice 1 cup
  3. Urad dhal 2 table spoons
  4. Fenugreek seeds 1 tea spoon
  5. Salt to taste
  6. For stuffing
  7. Boiled potato well smashed 1
  8. Grated carrot 1
  9. Boiled peas 2 tb spoons
  10. Finely chopped coriander leaves few
  11. Salt to taste and pepper powder 1/2 tea spoon

Instructions

  1. Wash and soak the rice, dal and fenugreek for four hours.
  2. Drain the water and grind them to fine smooth paste in a blender adding required salt.
  3. Allow the batter to ferment over night.
  4. Mix all the items given under "For stuffing" in a bowl and keep ready.
  5. Heat the Appe pan and fill the craters with 1/2 tea spoon oil each.
  6. Pour the batter just to the half level of the craters. Place the veg mixture with a table spoon on the batter in each crater.
  7. Now again pour a table spoon of batter in each crater, on the veg mixture , so that the veggies are covered fully.
  8. Close the pan with a lid and cook for five minutes in medium flame.
  9. Flip them and cook the other side alos drizzling some oil.
  10. Now the Kuzhi Paniyarams are ready to serve.
