Ingredients Serving: 10

  1. 1 cup white sugar or castor sugar
  2. 1/2 cup butter
  3. 2 eggs
  4. 2 teaspoons nutmeg powder
  5. 1 and 1/2 cups all-purpose flour
  6. 1 and 3/4 teaspoons baking powder
  7. 2 tbsp coffee (add more if you like)
  8. 2 tbsp water or milk as required

Instructions

  1. Preheat the oven to 175 degrees C. Line a muffin pan with paper liners.
  2. In a medium sized bowl, cream together the sugar and butter. Beat in the eggs, one at a time. Combine the flour and baking powder, then add to the creamed mixture and mix well. Add nutmeg powder as well and mix.
  3. Dissolve the coffee in the boiling water and pour in this mixture while still folding. Finally stir in the milk until the batter is smooth. Pour or spoon this batter into the prepared muffins pan.
  4. Bake for 20 to 25 minutes in the preheated oven.
  5. Once cooked, let them cool for a while then serve it warm.
