Fusion breakfast recipe with pan roasted paneer tikka and avacado dip wrapped in tortillas made with quinoa flour.

Ingredients Serving: 4

  1. Cottage cheese 200 grams
  2. Onion 1 diced
  3. Capsicum 1 diced
  4. Quinoa flour 2 cups
  5. Gram flour 1 cup
  6. Salt to taste
  7. Greek yoghurt 1 tablespoon
  8. Lettuce 7-8leaves
  9. Red cabbage 1 small
  10. Oil 2 tablespoon
  11. Paprika 1 tsp
  12. Avocado 1 ripe
  13. Lemon juice 1 tablespoon
  14. Melon seeds 1 tablespoon
  15. Crushed garlic 1 tsp
  16. 1 tsp mustard sauce
  17. Yoghurt 2 tablespoon
  18. Green chillies 2 chopped
  19. Tomato 1 diced and deseeded
  20. Water (to make dough)
  21. Baking powder 1 tsp

Instructions

  1. Mix quinoa flour,gram flour 1 tsp salt and 1 tablespoon oil and baking powder and make a dough.
  2. Cover with wet cloth and keep aside for 20 minutes.
  3. Cut cottage cheese in cubes and marinate along with onions,bellpepper and tomato in Yoghurt,paprika,green chillies and salt.Keep aside for minimum half hour.
  4. Make roundels of dough and flatten it with rolling pin.This mix should give 7-8balls.
  5. Heat tawa and cook the flattened circles like rotis and keep then aside.
  6. Take a non stick grill pan and put marinated cottage cheese in it along with 1 tablespoon oil.
  7. Cook for 10-12minutes flipping its side till the marination dries up and chunks get the brown colour.
  8. Arrange cottage cheese,onion,capsicum and tomato into a skewer like a tikka.
  9. Peel avocado and mash it.Mix 1/2 tsp crushed garlic in it with salt and lemon juice.Mix it well till it becomes creamy in consistency.Put melon seeds.
  10. Saute purple cabbage in non stick for 2 minutes and put salt in it.keep aside.
  11. Last task is to arrange every skewer in quinoa tortilla along with lettuce and purple cabbage topped with Greek yoghurt and mustard sauce.
  12. Serve it with guanamocole.
