Ingredients Serving: 2

  1. 1 ripe avocado
  2. 1 boiled egg
  3. 1/4 green bell pepper
  4. 1/4 red bell pepper
  5. 1 stalk spring onion
  6. 1 Lemon
  7. 1/2 tsp black pepper powder
  8. 1/2 deseeded tomato
  9. 1 small onion finely chopped
  10. 1 cucumber sliced in long strips
  11. 1 tbsp sour cream
  12. 1 tbsp feta cheese
  13. Salt to taste
  14. 1 thick slice of tomato
  15. Few twigs of mint leaves for garnish
  16. 1 cup Balsamic vinegar
  17. 2 tsp honey

Instructions

  1. Finely chop all ingrdients and mash the ripe avocado. In a big bowl mix all the ingredients and season well with salt and black pepper, sour cream and good squeeze of lemon juice.
  2. For plating with help of ring mould or round cookie cutter, arrange the cucumber slices in circle inside the mould then on bottom place the tomato slice season it with salt and pepper.
  3. Then put the avocado and egg salad and with back of spoon level it. Carefully remove the mould without disturbing the cucumber slices.
  4. Top it with a quenelle of feta cheese and baby mint leaves and drizzle with balsamic reduction.
