Ingredients Serving: 4

  1. 1 kg mutton
  2. 3 medium Onions sliced
  3. 2 tomatoes chopped
  4. 2 tbsp ginger and garlic paste
  5. 1 bay leaf
  6. 1/2 tsp turmeric powder
  7. 1 1/2 tsp Red Chili powder
  8. 1 tsp Roasted Cumin Powder
  9. 1 tsp Coriander powder
  10. 1/4 tsp Garam masala powder
  11. 4 green chilies
  12. 3/4 cup hung curd
  13. 1/4 cup oil
  14. Salt
  15. 1 inch Ginger cut into julienne
  16. 1/2 cup chopped Green chilies.

Instructions

  1. In a pressure cooker heat oil, add bay leaf and cumin seeds and let it crackle. Put mutton pieces, sliced onion, chopped tomatoes, turmeric powder, red chili powder and salt . Stir well and close the lid ( DON’T ADD WATER)
  2. Let it cook on high heat till one whistle then lower the heat let it cook for 7-8 minutes. The mutton must be cooked but little tough to break (90%cooked).
  3. Transfer the content of pressure cooker to a Wok and place it on high heat and stir continuously add ginger julienne, cumin powder, coriander powder, slit green chilies, garam masala, and hung curd .
  4. Keep stirring occasionally and bhuno till oil separates. Add chopped green coriander leaves and serve.

Excellent. The method of cooking the dish first in a pressure cooker and the then in a kadai is very good. Saves time and tastes great.
