ABOUT Lauki & Lentil Puree RECIPE

Lauki with lentils, almond and coconut milk makes a very healthy puree / porridge / soup. This Lauki Puree can be had guilt free by anybody at any time that makes you to feel very light and active.

Ingredients Serving: 4

  1. Bottlegourd / Lauki 500 gms
  2. Sliced Onions 1
  3. Crushed clove and cinnamon 1/4 teaspoon
  4. Moong dal 3 or 4 table spoons
  5. Soaked and peeled Almond 4
  6. White Pepper powder and salt to taste
  7. Butter 1 table spoon
  8. Coconut milk 200 ml

Instructions

  1. Wash, peel the Bottlegourd and chop to big cubes. Heat a Pressure cooker with the butter.
  2. Throw in the clove and cinnamon powder and give few stirs. Then add the sliced onions.
  3. After few stirs add in the bottlegourd pieces and the moong dal.
  4. Pour in 4 cups of water, add the almonds and pressure cook to 5 whistles.
  5. Once steam is released, put in to the blender and grind to smooth stuff.
  6. Add required salt and pepper powder and bring in to boil for 10 minutes in medium flame.
  7. Switch off, add the coconut milk and serve hot.
