How to make Sugar free Mixed fruit Halwa
Mix all the fruit pieces.(If you are using pineapple, then grind and extract the juice from the pineapple.)
Heat 2 tbsp of ghee in a non stick pan (non stick pan is always recommended when making any type of halwa), and add the raisins and fry for 8 seconds till you see that the raisins blots up. Now add the cashew nuts and fry the nuts
Soak the almonds in hot water. Press and remove the seeds and cut them into fine strips.
Boil half of the milk and add the fruit pieces and dates and cook the fruits in the milk.
When the milk is absorbed and the fruits are cooked, switch of the flame.
Add the pineapple extract/essence and allow the fruit mixture to cool. When the mixture is cooled, grind the mixture to fine paste.
Heat 4 tbsp of ghee in the non stick pan.
Add the ground fruit mixture and stir for a few minutes.
Add the remaining milk and bring to boil. Keep stirring continuously.
After some time, the whole mixture will thicken.
Add the condensed milk
Add half the amount of ghee.
Keep stirring and cooking till the halwa becomes a mass and will start leaving the sides of the pan.
Add the remaining ghee, cashew nuts and raisins and mix well and cook for another 2-3 minutes.
Remove from flame. Garnish with almonds and pistachios.
The halwa can be served hot in a bowl with a spoon, or refrigerated and served cool.
Or pour the halwa on to a greased tray. Allow to cool and cut into pieces and serve.
