ABOUT Aloo gobi RECIPE

Aloo gobi is one of the most commonly made North Indian side.There are 2 ways a aloo gobi recipe is made. A dry version and the other a gravy one. I am sharing a simple recipe that yields a tasty delicious gravy similar to the one served in restaurants.

Ingredients Serving: 3

  1. ¾ cup cubed potato / aloo (¾ by ¾ inch 1 medium)
  2. 1 ½ cup gobi / cauliflower florets (150 grams
  3. 2 tbsps oil
  4. ½ tsp cumin / jeera
  5. 1 green chili
  6. 1 cup cubed onion
  7. ¾ cup deseeded cubed tomatoes
  8. 1 tsp ginger garlic paste
  9. ¾ tsp garam masala
  10. 2 tbsp curd
  11. ¾ tsp coriander powder
  12. ¾ tsp red chili powder (Kashmiri or byadgi)
  13. Salt as needed
  14. ½ tsp crushed kasuri methi / fenugreek leaves
  15. Coriander leaves handful chopped

Instructions

  1. LUNCH IS READY
  2. CHOP ONIONS TO CUBES
  3. MAKE A FINE PASTE OF THESE.
  4. DESEED THE TOMATOES AND CUBE THEM AS WELL. ADD THEM TO A BLENDER JAR. 
  5. MAKE A FINE PASTE OF THESE.
  6. MAKE GINGER GARLIC PASTE
  7. POTATOES AND CAULIFLOWER OR SHALLOW FRY THEM IN OIL UNTIL ALMOST COOKED.
  8. WHILE THE VEGGIES GET FRY YOU CAN BEGIN TO MAKE THE GRAVY.
  9. HEAT OIL IN A PAN AND CRACKLE SOME CUMIN/JEERA. YOU AND 1 SMALL BAY
  10. ADD GINGER GARLIC PASTE AND FRY UNTIL IT SMELLS GOOD.
  11. ADD THE ONION PASTE.
  12. SAUTE UNTIL IT TURNS LIGHTLY GOLDEN.
  13. ADD THE TOMATO PASTE.
  14. ADD SALT TO TASTE
  15. ADD CHILLI, GARAM MASALA, CORIANDER POWDER, RED CHILI POWDER
  16. SAUTE UNTIL THE MASALA BEGINS TO LEAVE THE SIDES OF THE PAN. THERE IS NOT MUCH OIL USED HERE OTHERWI
  17. NOW ADD 2 TBSP CURD
  18. ADD ALOO GOBI AND MIX WELL
  19. ADD 3/4 CUP WATER
  20. NOW ADD TOMATO CUBS
  21. CLOSE COOKER
  22. ALOO GOBI IS READY
  23. ALOO GOBI IS READY TO SERVE WITH ROTI AND PAPAD
