We all love red velvet cheesecakes and red velvet cupcakes mainly for the theatrical effect from the red colour. The colour attracts us and the cream cheese on top is the best part. So , let’s make it at home ! This recipe is from the big book of treats by pooja dhingra

Ingredients Serving: 10

  1. For the cake :
  2. 150 gms castor sugar
  3. 120 gms flour
  4. 55 gms butter
  5. 100 gms yogurt
  6. 1 egg
  7. 1 tbsp cocoa powder
  8. 1 tbsp red food colouring
  9. 1/2 tsp vanilla essence
  10. 1/2 tsp cider vinegar
  11. 1/2 tsp baking soda
  12. A pinch of salt
  13. For the frosting :
  14. 125 gms cold cream cheese
  15. 300 gms icing sugar
  16. 50 gms butter
  17. 1 tsp lemon zest

Instructions

  1. Preheat oven to 180c. In a large bowl beat the butter and sugar together on medium speed for five mins . Add the egg
  2. In a small bowl whisk together the vanilla , red colour and cocoa powder. Add to the batter and beat well
  3. In a seperate bowl mix the yoghurt and salt together. Add to the Batter. Now add the flour
  4. In a small bowl mix the baking soda and the vinegar and add to the batter and beat till combined
  5. Then pour it in your cake mould and bake for about 20 mins or till a skewer inserted comes out clean
  6. For the frosting , in a large bowl beat the cream cheese and butter together. Then add the lemon zest and combine. Add in the sugar in three batches and refrigerate for a couple of hours.
