ABOUT Bhajji( mix vegetable curry) RECIPE

It includes combination of all vegetables. Vegetables as known to us are very healthy for everyone. Vegetables provide us fibre, iron, antioxidants and vitamins. Specially it is favourite of chidren.

Ingredients Serving: 4

  1. Boiled potatoes 4 (peeled)
  2. Cauliflower 1 cup (steamed)
  3. Carrots 1 cup ( steamed)
  4. Beans 1/4 cup ( steamed)
  5. Green peas 1 cup ( steamed)
  6. Spinach puree 4 tablespoon ( blanched)
  7. Bell pepper 1/2 cup chopped
  8. Onion 2 chopped
  9. Garlic. 2 tablespoon chopped
  10. Ginger 1 tablespoon chopped
  11. Tomatoes 4 chopped
  12. Tomato puree 1/2 cup
  13. Green chillies 2 chopped or to taste
  14. Salt 1 tablespoon or to taste
  15. Red chili powder 1 teaspoon
  16. Turmeric powder 1/2 teaspoon
  17. Garam masala 1/2 tablespoon
  18. Kitchen king 1/2 teaspoon
  19. Kasoori methi 1 teaspoon
  20. Coriander leaves 2 tablespoon chopped
  21. Sugar 1 teaspoon
  22. Ghee 2 tablespoon
  23. Water 2 cup

Instructions

  1. Add ghee to pan and add garlic, and cook for 1 minute.
  2. Now add onion, bell pepper and ginger. Roast till they are golden in colour.
  3. Now add chopped tomatoes. Stir constantly. Cook for 2 minutes.
  4. Add tomato puree. Mix well . Cook till it. Mash all the veggies except green peas.
  5. Add all dry masalas except kasoori methi. Add green chillies. Mix well. Now add mashed veggies and green peas.. Roast for 5 mintues.
  6. When masala mix with veggies add 2 cups of water add sugar and stir constantly. Cook for 10 mintues.
  7. Now add kasoori methi and coriander leaves. Your bhajji is ready to serve. Serve it with poori, parantha or pav.
