If you're looking for a fuss free, easy and make ahead dessert for Valentine's Day, here's one for you! "Posset" refers to an old English drink made in a way that's similar to this simple pudding. This dessert delivers great results with little effort. 3 common pantry ingredients and 10 minutes to make this rich, creamy, tangy no bake dessert in a jar! No eggs, no gelatin, no agar! Ingredients Serving: 2

  1. Cream, 25% fat - 310 ml
  2. Sugar, powdered - 75g (alter to taste and sweetness / tartness of the juice)
  3. Lime juice, freshly squeezed - 2 tbsp
  4. Orange Juice, freshly squeezed - 2 tbsp
  5. Zest of one large orange
  6. For the strawberry topping:
  7. 12-15 strawberries, sliced
  8. 1-2 tbsp sugar
  9. Fresh mint for garnish

Instructions

  1. Before we begin, make sure to keep the glasses/jars ready. Also, keep a fine mesh strainer and a bowl ready to strain the dessert.
  2. Pour the cream in a steel saucepan and heat it on low. Heat the cream till its hot to the touch and you can see bubbles around the periphery of the saucepan.
  3. Remove from the heat and cover with a lid to keep it warm.
  4. In another saucepan, combine both the juices and add powdered sugar. Stir to moisten the sugar.
  5. Grate the zest of an orange into the juice.
  6. Heat the juice with the sugar on low flame. Heat it just till the boiling point and take it off the flame.
  7. Now, stir in the hot cream into the juice till it becomes homogeneous and immediately pass the cream mixture through the strainer.
  8. Pour the cream mixture immediately in the waiting dessert glasses/jars and make sure not to stir it again or the dessert may not set properly.
  9. Leave some space above the dessert in the jar to fill them with strawberries.
  10. Refrigerate the posset for at least 4 hours and then later wrap it with cling film and let it set for sometime or may be overnight.
  11. Take strawberries in a small bowl and sprinkle with some powdered sugar on top. Let it sit for about half an hour so that strawberries will release its juices.
  12. After its set, top the posset with strawberries and a sprig of mint.
  13. Serve Chilled.
