ABOUT Chickpea Masala Veggie Burgers RECIPE

Spicy veggie burgers with a chickpea masala patty for an Indian twist, slathered with fresh coriander chutney and/or mayonnaise sauce and layered with fresh tomatoes, cucumber and lettuce.

Ingredients Serving: 4

  1. For the chickpea patties:
  2. 2 cups chickpeas or garbanzo beans (washed and drained if canned and cooked till soft , if using dry beans)
  3. ½ cup powdered oats
  4. 1 small onion, finely chopped
  5. ½ teaspoon, grated ginger
  6. ½ teaspoon grated garlic
  7. 1 green chilli or jalapeno, finely chopped
  8. 1 medium carrot, grated
  9. ½ cup chopped coriander leaves
  10. 1/8 teaspoon turmeric
  11. 1 teaspoon coriander powder
  12. 1 teaspoon garam masala powder
  13. ½ teaspoon chaat masala powder
  14. 2 teaspoons oil plus more for frying
  15. Salt to taste
  16. For Serving:
  17. Onion slices
  18. Tomato slices
  19. Cucumber slices
  20. Lettuce leaves
  21. Green Coriander Chutney
  22. Mayonnaise with some chopped onions and chilli sauce/tomato ketchup
  23. Toasted burger buns

Instructions

  1. In a large bowl, coarsely mash the chickpeas with a fork. Keep aside. In a small skillet, heat the oil. Add the onions and green chillies and sauté for 2 minutes till soft.
  2. Add the ginger and garlic paste and fry again till the raw smell goes, about 1 minute. Stir in the turmeric, garam masala and coriander powders and sauté for a minute more.
  3. Add this to the mashed chickpeas along with the grated carrots, powdered oats, chaat masala, coriander leaves and salt to taste.
  4. Mix well to combine all the flavors. Make 2 to 3 inch patties depending upon your preference and chill in the refrigerator for at least half an hour (optional).
  5. Just before making the burgers, heat a skillet and add enough oil to shallow fry the patties. Add the patties and fry on each side till crisp and golden brown.
  6. Place on paper towels to soak the excess oil. Serve warm or cold on a toasted burger bun with tomatoes, lettuce, onions, green coriander chutney, McDonald’s burger sauce (recipe below) and any other fixings you like.
  7. If you prefer, you can also bake these patties for a healthier version at 350 F for about 10 to 15 minutes. Additional vegetables like peas, beans or even beetroot can be added to the patties.
  8. Recipe for McDonald’s Burger Sauce: In a small bowl, blend 1/2 up mayonnaise, 2 to 3 teaspoons tomato ketchup (if you want a spicy sauce, use tomato chilli sauce or Sriracha sauce) and 2 teaspoons finely chopped red onions.
  9. If you have a bottle of dill pickles, stir in 1 to 2 teaspoons of brine or juice from the bottle. Mix well, and enjoy as a topping for the burgers! #BetterButterContest #BetterButter #MagicalBurgerAtHome #FoodMeinDaaloMagic
