Carrots cake is a very delicious dessert and it also fits good as an afternoon snack beside a good chai.

Ingredients Serving: 8

  1. 80 g maida (wheat flour)
  2. 200g sugar
  3. 300g Ground almonds
  4. 300g carrots
  5. 1/2 teasp. salt
  6. 4 eggs
  7. 1 teaspoon baking soda
  8. lemon juice of 1 lemon and lemon peel

Instructions

  1. Grate carrots.
  2. Separate the white and yellow of the eggs and mix the white.
  3. Give flour,almonds, baking soda and salt in a bowl 3. With the yellow egg parts mix the sugar. Now mix the yellow egg dough with carrots and the flour mix. Put the lemon juice to the dough. And also the grated lemon peel.
  4. Now put the white egg mix slowly to the dough.
  5. Put the dough in a round baking tray/sheet and bake it 45 min at 180°C.
  6. If you want you can make a paste out of 200g sugar powder and 4 table spoons of lemon juice. And put it on the cake after it cooled down.
