ABOUT Banana Chocolate Chip Cake RECIPE

The combination of banana and chocolate is incredibly good and to die for. The cake is super moist with a tender crumb and bites of mini chocolate chips throughout give an amazing taste and texture to this cake. The cake, which I made for a very special occasion, was so delicious that it got finished in a matter of hours.

Ingredients Serving: 6

  1. 1 1/4 cup all purpose flour
  2. 2 over-ripe large bananas, mashed
  3. 1/2 cup castor sugar
  4. 3 tbsp thick curd
  5. 2 large eggs at room temperature
  6. 1/4 cup softened butter
  7. 1/2 tsp baking soda
  8. 1 tsp Baking powder
  9. 1 tsp vanilla essence
  10. 1/4 cup warm milk
  11. 1 tsp vinegar
  12. 1/4 cup mini chocolate chips
  13. a pinch of salt, if using unsalted butter

Instructions

  1. Preheat the oven at 180 degrees Celsius for 10 mins. Grease the 9" loaf tin and dust with flour and keep aside. Coat the chocolate chips with flour and keep aside.
  2. Cream the butter & sugar for 5 mins till pale & fluffy. Add eggs one by one, beating well after each addition. Beat the mixture till it looks fluffy & custard-like.
  3. Add yoghurt and vanilla essence to the eggs mixture. Beat well. Add mashed bananas & whisk well with light hands.
  4. Add milk & vinegar & whisk once again. Sieve apf, baking powder, and baking soda in a separate bowl for 4 times.
  5. Add the sieved dry mixture in wet ingredients & fold it in using cut & fold method with light hands. Mix only till just combined & no lumps remain.
  6. Add the mini chocolate chips and fold in lightly. Save a few chocolate chips to sprinkle on top.
  7. Pour the cake batter in the prepared cake pan. Sprinkle the remaining chocolate chips on the batter and pop the tin in the oven.
  8. Bake in the preheated oven at 180 degrees Celsius for about 45-50 mins till the skewer comes out clean with moist crumbs. Let it stand in the oven for 5 mins. and then cool on the wire rack.
