A quick dessert to assemble, when pie shell and chocolate ganache is ready.

Ingredients Serving: 2

  1. Pie shell 1 (4 inch diameter)
  2. Strawberries 8-10
  3. Chocolate ganache 1/2 cup
  4. Pomegranate seeds 1/2 cup
  5. For the Pie Shell ingredients:
  6. 1 ½ cup all purpose flour
  7. ½ cup cold butter
  8. ½ tsp salt
  9. 1 tbsp sugar
  10. ½ cup ice cold water
  11. For the chocolate Ganache:
  12. 250 grams - dark chocolate cut into small pieces
  13. 200 ml - heavy whipping cream (I used Amul)
  14. 1 tablespoon - unsalted butter

Instructions

  1. Making the Pie Shell: Measure out the flour, salt, sugar into a large bowl Fill ice cubes into a glass. Pour ½ cup of water in it.
  2. Chop very cold butter into squares. Using a pastry cutter or your hands, mash in the butter into the flour mix.
  3. Mash until the flour resembles coarse bread crumbs Use just enough water to bring the dough together. Do not knead.
  4. If you see pieces of butter that’s a good thing. Flatten and refrigerate for atleast ½ an hour before using.
  5. Flour a work surface. Use a rolling pin to roll out the dough to use.
  6. Making the Ganache: Put chopped chocolate in a large heat proof bowl & keep aside.
  7. In a saucepan, heat cream & butter on medium heat. As soon as it starts to boil, remove from flame & pour over chopped chocolate.
  8. Allow it to stand without mixing for few minutes (3-4). Do not stir as we do not want to incorporate air.
  9. Using a wooden spoon/ rubber spatula or whisk, gently stir by beginning in the center & gently moving out to the edge of the bowl.
  10. When the chocolate is fully melted & mixture is smooth you can take it off the heat.
  11. Allow it to cool down completely before using.
  12. Brush the inner part of pie shell with chocolate. Line it with strawberries. Pour warm ganache over the strawberries to completely cover it.
  13. Top with pomegranate seeds. Keep in fridge to set.
