ABOUT Rava kesari RECIPE

It is south Indian dish prepared with less ingredients. It served as prashad for festivals. Today i make it for Basant panchmi celebration.

Ingredients Serving: 4

  1. Semolina 1 cup
  2. Ghee 3/4 cup
  3. Sugar 1 cup
  4. Saffron 8 strands (soaked in milk)
  5. Cardamom seeds 1 teaspoon
  6. Chopped nuts (almonds, cashews, raisin)
  7. Milk 1 cup
  8. Water 1 cup
  9. Yellow food colour 1 pinch diluted in water

Instructions

  1. Add water,sugar and cardamom powder and heat it till sugar dissolves.
  2. Now add 1/2 cup ghee to a pan and fry nuts. Remive it in a bowl. Add semolina to ghee roast it properly for 5 minutes on medium flame.
  3. Stir constantly to avoid burning. When it starts leaving ghee add sugar syrup and mix well. Stir constantly.
  4. Add milk and saffron. Stir constantly carefully.
  5. Add yellow food colour. And mix well. Stir constantly till semolina absorb water and milk properly. And start leaving pan . Stir it with full power.
  6. Stir it till it is not leaves ghee from it. Add fried nuts. Add balanced ghee and mix well. Your Rava kesari is ready to serve.
