Ingredients to make Melanzana Burger

  • 4 small mini size dinner rolls
  • Eggplant or Large purple brinjal cut into thin rounds
  • 1 large red onion cut into thin discs
  • Half cup Shredded Swiss Cheese or any cheese
  • Half cup olive oil
  • Bunch of fresh basil leaves
  • Salt and pepper to taste
  • 1 large tomato sliced thin
  • 1 cup lettuce leaves
  • 2-3 cloves garlic
  • 2-3 spoons pine nuts
  • Half cup Parmesan cheese

How to make Melanzana Burger

  1. To make the basil pesto take the basil leaves, garlic , pine nuts, olive oil , salt and Parmesan cheese
  2. Blend coarsest and basil pesto is ready
  3. Take a pan and add 2 spoons of oil grill the eggplant and onions for 3-4 minutes, add salt and pepper
  4. In the same pan add butter and toast the mini dinner roll burgers
  5. The burger is ready to be assembled start with one layer of bread , tomato, lettuce, cheese, basil pesto
  6. Layer with eggplant and add the second bread and top with pesto
  7. Enjoy the delicious burgers

My Tip:

Grilling onions and eggplant gives a wonderful smoky flavor both kids and adults will love this
