Dahi Vada

Ingredients to make Dahi Vada

  • 1/2 cup urad dal soaked for 6 hours
  • 2 tbsp khajur Imli ki Chutney
  • 3 cups beaten yogurt
  • 1 tsp roasted cumin seeds powder
  • 1 tsp chat masala
  • 1/2 tsp chilli powder
  • salt to taste
  • 1/8 tsp baking soda
  • 3 green chillies
  • 1/2 inch ginger
  • 1 tbsp green chutney

How to make Dahi Vada

  1. Wash and drain the urad dal. Grind together the urad dal, ginger, green chillies and salt in a food processor to a coarse paste.
  2. Add the baking soda to the urad dal paste and mix well till the batter is light and fluffy. Add a little water if required.
  3. With wet your hands drop small small balls of the batter in the hot oil. Deep fry on a slow flame till the vadas are golden brown for about 8-10 minutes. Drain on absorbent paper.
  4. Assembling of Dahi vada: Soak the deep fried vadas in water for about 20 minutes.
  5. Just before serving, drain and squeeze out the excess water. Arrange the vadas on a serving dish and top with beaten curd.
  6. Garnish with chilli powder, cumin seed powder and chat masala. Serve with khajur imli ki chutney and green chuntney.

My Tip:

Tastes best with chilled yoghurt.
