ABOUT Gaajar Ki Kheer (Rice and Carrot Pudding).. RECIPE

A yummylicious pudding made with red carrots when they are abundantly available in winters. These delicious juicy carrots are just right for an aftermeal dessert in any dinner party. Come winters and this becomes an important dessert idea on any given day. Lipsmacking dessert that will leave you spellbound. One of my aunt who stays there makes it for me everytime she visits us. This is my sweetest tribute to my aunt and i dedicate this to her.

Ingredients Serving: 10

  1. Full fat milk 2 litres + 1/2 a litre extra
  2. Carrots (red ones) shredded 1/2 kg
  3. sugar 1 cup
  4. OR
  5. Condensed milk 1 tin (397gm)
  6. Khoya/mawa 1/2 cup (optional)
  7. Cardamom pods crushed 3
  8. Almonds slivered 1/3rd cup
  9. Walnuts slivered 1/4th cup
  10. Pistachios slivered 1/4th cup
  11. Boiled rice 1 1/2 cup
  12. ghee 1/2 cup
  13. Kewra essence 1/2 tsp

Instructions

  1. Bring milk to a rolling boil on a high heat.
  2. After it starts boiling, lower the flame and allow it to simmer.
  3. Now blend in that extra half a litre of milk and boiled rice until smooth in a blender.
  4. Heat ghee in a pan and stir fry the shredded carrots until the raw smell fades away.
  5. Add this to the boiling milk along with the cooked rice mix.
  6. Cover and cook until tender and smooth without any lumps.
  7. After the carrots and the rice mix is cooked, add in sugar or condensed milk.
  8. Keep stirring in between so that it doesn't stick to the bottom.
  9. After the desired consistency is achieved, add half of the slivered mixed nuts.
  10. Top it with khoya.
  11. And garnish with the remaining mixed nuts.
  12. Chill it in the refrigerator for an hour or two.
  13. Serve it chilled to your family and guests.
