ABOUT Oatmeal with Egg RECIPE

Ingredients Serving: 2

  1. 2 cups rolled oats
  2. 4 eggs
  3. 1 tsp olive oil
  4. 1 tsp butter
  5. ½ cup chopped onions
  6. 2 cups buttermilk
  7. salt to taste
  8. Crushed black peppercorns to taste
  9. ½ yellow capsicum
  10. ½ cup chopped tomatoes
  11. 50 gms processed cheese
  12. A few sprigs of fresh parsley

Instructions

  1. Heat olive oil and butter in a non-stick pan.
  2. Add onions and saute for 1 minute.
  3. Add oats and mix.
  4. Add buttermilk and mix and cook.
  5. Add salt and crushed peppercorns and mix.
  6. Chop capsicum finely and put into a bowl. Add chopped tomatoes and mix well.
  7. Put oats into micro proved bowl.
  8. Break an egg into bowl.
  9. Sprinkle a little salt and crushed peppercorns.
  10. Place tomato-capsicum on other side of the yolks.
  11. Grate a little cheese and put over the vegetables.
  12. Cook in the microwave for 1 minute.
  13. Serve hot garnished with small sprigs of parsley.
