ABOUT Gazpacho RECIPE

One of my favourite soups, this cold soup barely takes 10 minutes to put together. Tastes best with slightly stale bread

Ingredients Serving: 6

  1. 6 ripe tomatoes peeled and chopped
  2. 1 onion chopped
  3. 1 red bell pepper seeded and chopped
  4. 1 cucumber peeled chopped
  5. 1-2 Tbsp chopped fresh parsley
  6. 2 stalks celery chopped
  7. 2 Tbsp chopped fresh chives
  8. 1 clove garlic minced
  9. 1/4 cup red wine vinegar
  10. 1/4 cup olive oil
  11. 2 Tbsp freshly squeezed lemon juice
  12. 2 teaspoons sugar
  13. Salt and fresh ground pepper to taste
  14. Dash of Tabasco sauce to taste
  15. 1 teaspoon Worcestershire sauce (if you're vegetarian omit)
  16. 4 cups tomato juice
  17. 5 slices of stale bread

Instructions

  1. Combine all the ingredients in a blender. Blitz coarsely. Drizzle with olive oil and serve chilled.
