Ingredients Serving: 1

  1. Eggs 2 no
  2. salt as per taste
  3. Mix herbs
  4. Black pepper
  5. Onion one small
  6. Capsicum one small
  7. Mushroom 2-3 nos
  8. Spinach 3-4 leaves
  9. Olive oil
  10. One small tomato
  11. One green chilli

Instructions

  1. Chop onion, mushroom,capsicum, green chillies
  2. Beat eggs and add salt, pepper, mix herbs than beat again
  3. Cut one small tomato into slices
  4. In non-stick fry pan add 2 tbsp olive oil
  5. Now on medium flame saute tomato and spinach leaves for 30 seconds
  6. Removs tomato and spinach leaves from pan
  7. Now add capsicum and onion in the same pan anx saute till onion turns light pink in color
  8. Add mushroom in the pan and saute for 1 minute on low flame
  9. Now add beaten eggs and green chillies and cover with a lid
  10. After one minute top with tomatoes and spinach and keep it on low flame with a lid for 2 more minute
  11. Turn off the flame and keep for 30 seconds
  12. Serve hot with brown bread
