Sweet Corn Sundal !!

Ingredients to make Sweet Corn Sundal !!

  • Sweet corn - 2 big cups
  • carrot grated - 2 nos
  • pomegranate kernels - 1 / 4 th cup
  • ginger - 1 tspn finely chopped
  • green chilly - 1 finely chopped
  • curry leaves - few
  • coriander leaves for garnish
  • coconut freshly grated - 1/4 th cup
  • mustard seeds - 1tspn
  • coconut oil - 1 tbspn
  • salt to taste

How to make Sweet Corn Sundal !!

  1. Take a kadai put the washed sweet corn and little water in it and boil it for 5 minutes... till done
  2. Transfer this cooked sweet corn in a plate
  3. Then take the same kadai, put oil and when hot add the mustard seeds & after it splutters put curry leaves, green chilly & ginger and saute well for a minute...
  4. Then add the grated carrots & boiled corn.... and salt....mix well ....Let it cook for about 2 minutes... Then turn off the gas.
  5. Garnish with coriander leaves , coconut & Pomegranate kernels...
  6. Serve immediately.... :blush:
  7. Here I have served it in Cabbage bowls
