Brinjal is my favourite vegetable and this is a yummy curry made with this with the indulgence of fenugreel leaves, a perfect side dish for roti or rice with dal.

Ingredients Serving: 2

  1. Brinjal 4
  2. Fenugreek leaves 2 cup chopped
  3. Salt to taste
  4. Tomato 1 chopped
  5. Garlic paste 1 spoon
  6. turmeric powder 1/2 spoon
  7. Red chilly powder 1 spoon
  8. Cumin seeds 1/4 spoon
  9. Asafoetida 1 pinch
  10. Oil 2 spoon

Instructions

  1. Cut the brinjal in small pieces.
  2. Take a pan.add oil .add cumin seeds,Asafoetida.
  3. Then add garlic paste.add brinjle and fenugreek and tomato.leaves. Let be heat for 5 minutes
  4. Add all spices.
  5. Brinjal and fenugreek leaves sabji is ready .
