ABOUT healthy savory semolina muffin | vegetarian savoury muffins RECIPE

I was observing my child for quite sometime and realised that he has become too picky in his choice of vegetables. And that is why they are kids. I needed a viable solution. I am also aware of my child inclination towards muffins. Be it any muffin, he would simply grab one and eat it at different intervals. This was a lot of sweet intake and I was contemplating of replacing sweet muffins with savory muffins. I decided to kill two birds with one stone. This gave birth to the idea of savory vegetable muffins. There also I made a healthy choice of picking semolina and crafted savoury semolina muffins.

Ingredients Serving: 9

  1. Grated Carrot 1/2 cup
  2. Peas 1/4 cup
  3. Chopped capsicum ¼ cup
  4. Roasted semolina with wheat bran 1 cup(100 gm)
  5. Fresh curd/ Yogurt ½ cup (120 ml)
  6. Water ½ cup (120 ml)
  7. Salt 2 tsp
  8. Chili flakes 1 tsp
  9. Baking soda 1 tsp
  10. Pizza seasoning 1 tsp
  11. Grated cheese Optional
  12. Oil 2 tbs

Instructions

  1. In a mixing bowl, add water, yogurt/curd and whisk it well.
  2. Add semolina, Oil and all the chopped vegetables. Prepare a smooth batter.
  3. Batter will be runny. Let the batter rest for 10 minutes. During this time semolina will soak the moisture and become soft.
  4. Meanwhile keep the oven for preheating at 180 °C.
  5. Stir the batter. Add salt, chilli flakes, Pizza seasoning and baking soda to the batter. Mix everything well.
  6. If you feel the batter is too thick, you can add 2 tablespoons of milk.
  7. Arrange muffin liners in a tray and fill each upto 2/3. Sprinkle some grated cheese on top.
  8. Bakes these muffins in a preheated oven at 180 °C for 25 minutes.
  9. Once baked, take out the muffins from oven and let them cool completely before serving.
  10. Savoury semolina muffins are ready.
