One pot Lentil Soup

Ingredients to make One pot Lentil Soup

  • 1/4 cup yellow moong dal ( de-husked)
  • 1/4 cup green moong dal (with skin)
  • 1 small onion, roughly chopped
  • 1 small tomato, roughly chopped
  • 1 green chilli, broken in two
  • 1/2 inch ginger, roughly chopped
  • 2 large cloves garlic, roughly chopped
  • 1/2 teaspoon haldi powder/ turmeric powder
  • 1/2 teaspoon cumin
  • salt to taste
  • coriander with stalks or any micro greens to garnish, finely chopped
  • some lemon juice to squeeze with serving

How to make One pot Lentil Soup

  1. Wash and soak the dal for 10 minutes.
  2. In a pressure cooker bring all the ingredients, except coriander and lemon together.
  3. Add 2 cups of water.
  4. Cook on medium flame for 4-5 whistles or until the dals are well cooked.
  5. Once the pressure subsides, open the lid, using an immersion blender grind the soup to a homogenous mixture.
  6. Add water if required to bring it to a thick soup like consistency. After adding water cook for couple of minutes to bring it to a gentle simmer.
  7. Adjust the seasoning to taste.
  8. Serve piping hot garnished with some chopped coriander or micro greens and squeeze of lemon juice.
