Ingredients to make Shukto..

  • potato - 1 , cut lengthwise
  • Raw papaya- 1 /2 , cut lengthwise
  • Raw banana - 1 ,cut lengthwise
  • Bittergourd - 1 , cut quaters
  • Bringal - 1 ,cut lengthwise
  • Drumstick - 1 cut lengthwise
  • Sweet potato- 1 cut lengthwise
  • Bori | sundried lentil dumplings - 6-7
  • turmeric powder- 1/4 tsp
  • Panchforan - 1/2 tsp ( combination of onion seeds,cumin seeds,fennel seeds,fenugreek seeds ,mustard seeds)
  • Radhuni (bengali spice)- 1/4 tsp
  • bay leaves - 1 or 2
  • ginger paste- 1 tsp
  • mustard seed paste- 1 /2 tbsp
  • Milk - 1/2 cup
  • Ghee or clarified butter- 2 tsp

How to make Shukto..

  1. Washed all vegetables properly..
  2. Heat a pan with 1 tbsp mustard oil. Add bori (sundried lentil dumplings) fry both sides then take out from pan and keep aside..
  3. In the same pan Add bringal .sprinkle little salt ..fry bringal both sides..take out from kadai..
  4. Then add bittergourd. Sprinkle some salt n fry properly..then take out from pan..keep aside..
  5. Now add little more mustard oil in the pan .add panchforan ,radhuni and bay leaf..
  6. Then fry potatoes,Raw banana ,Raw papaya ,Sweet potato and drumsticks..add little salt and turmeric powder ..stir well everything..
  7. Cover pan and cook vegetables for 10 minutes or till cooked well
  8. Then add fried bringals and bittergourd..stir to mix well everything..
  9. Now add ginger and mustard paste,Sugar and bori (sundried lentil dumplings)..give a good mix..
  10. Then add 1/4 cup water and 1/4 cup milk ..stirring well everything..
  11. Cover pan for 5 minutes or till gravy reduced little...
  12. Open cover ,add ghee and mix well..check seasonings if required adjust..
  13. Ready Shukto..serve it with steam rice..
