Ingredients Serving: 4

  1. Mushroom - 200 gms
  2. Broccoli - 4 pieces
  3. Green pea - 1 cup
  4. Green chilli - 1 tbsp
  5. Coriander - 2 tbsp
  6. Ginger - 1 tbsp
  7. Tomato puree - half cup
  8. Chopped onions - 1 cup
  9. Chopped garlic - 1 tbsp
  10. Mashed paneer - half cup
  11. Curd - 2 tbsp
  12. Fresh cream - 2 tbsp
  13. Paste of cashew nuts - 1 tbsp
  14. Dry powder of pistachios - 2 tbsp
  15. Red chilli powder - 1 tbsp
  16. Turmeric - 1 tbsp
  17. Tamarind powder - 1 tbsp
  18. Coriander powder - 2 tbsp
  19. Cumin - 1 tbsp
  20. Refined Oil - 2 tbsp
  21. Paste of roasted onions - 1 tbsp
  22. Salt - as desired
  23. Fennel - as desired

Instructions

  1. Cut steamed mushrooms in such a way that it makes hole (as room for stuffing) in each one of them and separate the cut off pieces as they are required later.
  2. In a bowl take 2 tbsp dry pistachios powder, 1 tbsp salt, half tbsp curd, ginger, 1tbsp tamarind powder, half tbsp garam masala, 1 tbsp onion powder, cardamom powder, coriander ,fennel and mixt them all properly.
  3. Stuff good amount of this paste in mushrooms and close them with the cut off piece of each mushroom.
  4. Pour 2 tbsp of oil in a pan and then add some onions in it.
  5. Add garlic, ginger, green chilli and roast it till it gets of pinkish color
  6. Add little coarse paste of broccoli and roast it.
  7. roast turmeric, green chilli and garam masala in the pan.
  8. Add desired amount of green pea with roasted onion paste and curd. Stir it efficiently
  9. Now add all stuffed mushrooms in the same pan accompanied with a half cup of water and desired amount of salt.
  10. Cook it for 10 mins
  11. Once the mushrooms are fully cooked, take them out in a shallow bowl
  12. Finally, Garnish the mushrooms with fresh cream and coriander.
