As we all know Hyderabadi biryani is very famous all over world. This is a biryani in which the uncooked chicken and half cooked rice is cooked on dum mode.

Ingredients Serving: 4

  1. 700 grams chicken
  2. 3 Cup rice
  3. 3 table spoon red chilli powder
  4. 1 table spoon coriander powder
  5. 1 table spoon garam masala
  6. 1 table spoon cummin powder
  7. Salt to taste
  8. 1/2 table spoon turmeric powder
  9. 3 table spoon ginger garlic paste
  10. 4-5 whole chillies
  11. Barista( fried onion)crushed
  12. Organic food colour
  13. Mint leaves
  14. Coriander leaves
  15. Whole garam masala ( cardamom, cloves, cinnamon, shahijeera,black pepper,
  16. Lemon juice
  17. 1 cup curd
  18. Milk 2 table spoon
  19. 3-4 table spoon oil
  20. 2 table spoon ghee

Instructions

  1. Wash & clean the chicken
  2. In a bowl take chicken add ginger garlic paste, curd, red chilli powder, turmeric powder, dhaniya powder. Cummin powder, salt, garam masala,and mix
  3. Now add curd , sprinkle Coriander leaves
  4. Add chopped mint leaves , Whole green chillies
  5. 3-4 table spoon oil, Add crushed fried onion , Lemon juice
  6. Mix well with hand, & keep for marination
  7. Soak rice
  8. Ina big vessel boil the water
  9. Add salt
  10. Whole garam masala
  11. Drops of lemonjuice
  12. Let it boil
  13. When water boils add rice
  14. Cook only 75-80%
  15. Once cooked drain the water
  16. In same vessel spread marinated chicken. On top of the chicken spread rice layer. Add oil and little ghee over it. Spread food colour mixed with milk. Sprinkle fried onion
  17. Sprinkle mint n coriander leaves. On top again add little oil or ghee
  18. Keep it on dum by covering the lid properly. Cook on dum for 15-20 mins.
