ABOUT Desi Bottle Gourd koftas in Tomato Cashew River RECIPE

Bottle Gourd is a very healthy vegetable and it's water content is 96%. It is low in saturated fat, cholesterol, high in dietary fibre, Vitamin C, riboflavin, iron and manganese. These bottle gourd koftas are completely oil free and are being combined with a unique healthy gravy which enhances it's taste.

Ingredients Serving: 4

  1. Bottle Gourd, 1
  2. Onions, 2, chopped
  3. Dry red chilli,2
  4. Cumin seeds, 1tsp
  5. Tomatoes, 3
  6. Cashews, 4-5
  7. Coriander powder, 1/2tsp
  8. Salt to taste
  9. Turmeric powder, 1/4tsp
  10. Red chilli powder, 1/4tsp
  11. Water as required
  12. Coriander leaves, chopped, 1tsp

Instructions

  1. Take bottle gourd and wash, peel and grate it.
  2. Add 1 chopped onion, red chilli powder and salt and mix well.
  3. Now prepare balls out of this mixture.
  4. Take appam pan and cook the bottle gourd koftas.
  5. It will take around 7-8 minutes to cook all the koftas.
  6. For preparing the gravy, initially take dry red chillies and cumin seeds and dry roast them on a tawa.
  7. Take a grinder and grind the roasted red chilli and cumin seeds and keep aside.
  8. Now take a non stick pan and dry roast the onions until slight golden brownish.
  9. Until the onions are getting cooked take tomatoes and cashews and grind them together.
  10. Now put this tomato cashew paste in the onions and cook.
  11. Add the grinded red chilli, cumin powder to it and mix well.
  12. Now add coriander powder, salt, turmeric powder and water and cook until desired consistency.
  13. Your gravy is ready.
  14. Now take a serving dish and pour the gravy into it. Put the prepared bottle gourd koftas into it.
  15. Add the coriander leaves to it.
  16. Your tasty healthy dish is ready.
