Ingredients Serving: 4

  1. 1 cup Gram flour (Besan)
  2. 1/2 cup curd (Thick and not sweet)
  3. 1/4 cup water
  4. 1 tsp sugar
  5. 1 tbsp oil
  6. 1 Pinch Turmeric powder
  7. 1/4 tsp Salt
  8. 1 tsp green chilli (Finely chopped)
  9. 1 tsp fruit salt (Eno)
  10. 1 tsp Ginger paste
  11. 1 tsp mustard seeds
  12. 2 tsp Coriander leaves (Chopped)
  13. 2 tsp sugar
  14. 4 Green chillies (Sliced)
  15. 10 curry leaves
  16. 1/2 tbsp oil
  17. 1 cup water

Instructions

  1. Add the gram flour, curd and 1/4 cup (1 cup=540 ml) water in a bowl. Mix it well to remove all the visible lumps, mix for a minute. Add the rest of the ingredients: ginger, salt, turmeric and green chili. Add 1 tsp sugar, 1 tbsp oil and mix for 2 minutes. The batter is ready.
  2. Grease a microwave safe dish so that the dhokla does not stick to the bottom or any corner of the dish. Add the eno in the batter and mix it well. Immediately transfer the batter into the greased pan after mixing it. Fill only 3/4 of the dish.
  3. Keep the dish in the microwave for 4 minutes on a high power. Select the highest power level, if you have the option.
  4. Slice the dhokla into squares or rectangular shaped pieces before making the seasoning. mark horizontal and vertical cuts. (Keep the size of your dhokla slices as per your choice).
  5. For the seasoning, heat 1/2 tbsp oil in a pan on a high flame for 30 seconds. Add the mustard seeds and wait for another 30 seconds.
  6. After 30 seconds, turn the stove to a medium flame. Add the green chillies, curry leaves and coriander leaves. Mix it well.
  7. Heat 1 cup of water and 2 tsp sugar on a high flame and let it cook for 3 minutes. Turn off the stove and directly transfer this on to the dhokla pieces.
  8. Spread it evenly all over the pieces such that each piece gets to taste the seasoning and gets fluffy. Keep aside for 10 minutes before serving.
