ABOUT Eggless Dates and Apple cake with streusel topping RECIPE

I used dates and apples for this cake as I wanted to play around with the sugar content of the cake. Adding naturally sweet ingredients gave me that freedom. Here is how you can make this gorgeous cake.

Ingredients Serving: 10

  1. 3/4 cup … Whole Wheat flour
  2. 3/4 cup … All Purpose Flour
  3. 1/2 cup Chopped pitted dates
  4. 1/2 cup diced Apples (I didn't peel them)
  5. 1/2 cup Light brown sugar
  6. 1/2 cup White sugar
  7. 1.5 tsp Baking powder
  8. 1 tsp Salt
  9. 1 cup Butter milk
  10. 1 cup Refined Flavorless oil.
  11. 4 tbsp All purpose flour [For the topping]
  12. 2 tbsp Softened butter [For the topping]
  13. 3 tbsp light Brown sugar [For the topping]

Instructions

  1. Line 8’ inch cake tin with parchment and pre heat your oven at 180C.
  2. In a bowl whisk dry ingredients (skip adding apples and dates) and set aside.
  3. Take a small bowl and combine wet ingredients.
  4. Now form a well in the dry ingredients and pour in wet ingredients. Combine using spatula. When the ingredients are combined well, tip in apples and dates.
  5. Combine and pour in this batter into pre-arranged cake tin.
  6. Now for topping, in small bowl combine flour, sugar and butter until the batter resembles rubble of flour and sugar.
  7. Spread this over cake batter and bake for 30-35 minutes or till the skewer runs clean when checked in the centre.
