Gajar Gobhi Shalgam Ka Achar

Ingredients to make Gajar Gobhi Shalgam Ka Achar

  • 250 gms cauliflower
  • 250 gms carrot
  • 250 gms Turnip
  • 500 ml water
  • 250 ml mustard Oil
  • 70 gms ginger
  • 1/4 tsp asafoetida / Hing
  • 1/2 tsp turmeric Powder
  • 2 tbsp red chilli Powder
  • 2 tbsp salt
  • Pickle masala (1 tbsp Fenugreek Seeds, 1 tbsp Fennel Seeds,1 tbsp mustard Seeds- grind into the powder)
  • 2 tbsp Garam masala
  • 125 ML white vinegar
  • 100 gm jaggery

How to make Gajar Gobhi Shalgam Ka Achar

  1. TAKE 250 GMS EACH OF CAULIFLOWER, CARROT & TURNIP
  2. HEAT 500 ML WATER IN A WOK
  3. ADD CHOPPED VEGGIES
  4. COOK FOR 3-4 MINS
  5. DRAIN, SPREAD ON A KITCHEN TOWEL, DRY IN SUNLIGHT FOR 6-7 HOURS
  6. HEAT 250 ML MUSTARD OIL TILL SMOKING POINT
  7. TAKE OFF HEAT, LEAVE FOR 3-4 MINS
  8. KEEP ON LOW HEAT, ADD 1/4 TSP ASAFOETIDA
  9. ADD 70 GMS GRATED GINGER
  10. ADD 1/2 TSP TURMERIC, 2 TBSP EACH OF RED CHILLI & SALT
  11. ADD 3 TBSP PICKLE MASALA, 2 TBSP GARAM MASALA
  12. ADD THE DRIED VEGGIES, MIX WELL
  13. HEAT 125 ML WHITE VINEGAR
  14. ADD 100 GMS JAGGERY
  15. ONCE IT MELTS, TAKE OFF HEAT
  16. ADD COOLED JAGGERY MIX TO THE VEGGIES
  17. MIX & STORE IN A CLEAN, STERILIZED GLASS JAR
